Since there's an option to switch Xan into a Sorcerer, I'm wondering which of
these NPC mod characters makes a better Sorcerer in BGII.

She can go a lot of different ways.
I think most people slap a STR belt on her, and the best armor possible.
After that, there's a lot of ways to go:

Going solo is my latest in "spicing up" my games. I'm currently playing with
a Gnome Ftr/Ill and a Human Berserker who will dual class to Mage at level 13.

Is it one at level 1, and then 4, 7, ect.?
I'm trying to figure out how many traps thieves in Tutu will have according
to their level, and can't find anything about traps in the guide (maybe I'm
missing it though).

I'm looking forward a bit on my solo Fighter/Cleric run.  I think I might
have a problem with Elder Orbs, and would like a defense against Imprisonment
other than becoming the Slayer.
