Just seen someone mount their horse while on the boat. They were
somehow stood on the very side and summoned the horse. They were then
able to jump straight off ready mounted at the other side. Saves a
bit of time, how do I do that?

Stand right on the edge, although I have seen people stand on the box
on the main deck and summon the mount there. A quick jump off to the
top of the gangway when the ship docks and they're off running. Never
been in that much of a hurry, personally.

There are several places on a boat where you can activate your mount:
- on the very edge of the boat (mind you don't fall off the boat!)
- on the crate that's on the main deck (if you can figure out how
to get on it in the first place!)
- on the very edge of the stairs that lead to the upper deck.
The tricks to getting on the very edge are:
- approach at an oblique angle
- walk, don't run
- practice
It's best to practice on the stairs, because if you fall off you
don't drown :-)

You can do it on the rigging too - again you need to position
yourself so you are not standing on the rigging but appear to be
floating next to it.

I mount on the rigging and jump off the boat when it hits shore.

you can mount up if you stand on the very edge of the boat
on the crate/box, on the edge of the rigging too

Like you just said - stand on the edge of the boat. There are a couple
other places on the boat where you can mount too (such as on top of the
boxes), but they're not as useful. *

The boxes work fine - simply mount on them and then do a running jump
off the edge of the ship to land on the dock so you don't auto-dismount,
doesn't save a huge amount of time but it does work.
