I just last week bought FFX. (I'm a little slow)
At the moment I'm confused, underpowered and have been startled by the
existence of Chocobo power, but I'm having great fun. I like it.
One thing though. How do I undo Lvl locks on the Shere Grid?

You will come to understand why Yevon forbids the use of more advanced
technology.

With key spheres. I can't remember where you first get them. Then you must
be adjacent to the lock, use the key sphere on the lock and it will
dissappear, becoming an empty node.

There was only ever one valid use for the notorious <blink> tag:
Schrodinger's cat is <blink>not</blink> dead.

If I recall, you get the first one very near to the Mi'ihen highroad.
