Anyone know if there is a file/soundtrack (mp3?) of the music from the
original Doom, or Doom 2?

The music is stored in the .wad files in MUS format, which can be
extracted and converted to MIDI. See http://doom.wikia.com/wiki/Music
for more details...

Otherwise, played on a Roland SCC1 and converted to MP3:
